This is such an easy and nutritious snack! All you need is time to set and forget, twice. How are seeds nutritious? Dr Axe explains it well in his post Top 10 Healthiest Seeds to Eat + Their Benefits and this recipe is one way to get them all in your life.
Serves: About 4-5 snacks. Time: 8+ hours.
Ingredients
These quantities are for one cookie tray worth of cracker mixture. If your oven has more room, multiply accordingly.
- 1/3 cup ‘jelly’ seeds such as linseeds and chia seeds
- 1 cup water
- 1/3 cup or more of other seeds (pepitas, sunflower seeds etc.)
Optional flavourings (use plenty):
- Salt
- Cracked black pepper
- Dried herbs such as oregano
- Powdered garlic
Method
- Rinse the jelly seeds under water and place in a large bowl.
- Add the water and disturb the seeds with your fingers to distribute.
- Set and forget. Leave to soak for at least four hours. Overnight is fine. (Tip: Disturb mixture part way through to redistribute the seeds and break up lumps with your fingers.)
- After four hours, add the other seeds and all flavourings. Mix well.
- Line a baking tray with baking paper. Spread the jelly thinly and evenly across the tray.
- Place in the oven on the lowest temperature setting (40-90 degrees Celcius is typical) and leave to dry out for at least four hours. If needed, you can turn the oven off and leave the cracker mixture in there to resume drying out later. (Tip: Once semi-dry, peel off the paper and flip as one piece.)
- The crackers are done once the mixture is dry, crispy and will snap into pieces. Break into rustic shapes and enjoy! (Tip: Keep the sheet of baking paper to reuse next time.)
